If your graphics card supports it, LFS supports it. LFS itself doesn't "support" any screenmodes per say, it just asks DirectX what is available. If your DirectX (which in return asks your monitor/GFX card drivers) says it's able to do 3072x768, then LFS will be able to run in that mode, too.
The question is, will you really get a higher FOV or just a stretched image? :shrug:

Field of view. The higher the FOV, the more you see. At a low FOV, you only see the windscreen and a bit of the steering wheel, then when you increase it, you start seeing the mirrors, doors, etc.

FOV = Field of View
Yes, you can adjust the FOV in LFS, so this isn't a problem.
About three monitors:
This only works with the Matrox Parhelia. If you are in posession of one of these cards you're ready to go.

I'm not using the Matrox Parhelia, but can i add one more pci display to setup the third monitor?
Or use the nvidia-SLI system?

Hehe, oh yeah I forgot to mention (like Vain said), you need a card that has three outputs. Unless you manage to find some kind of adapter, a normal dual-head card won't be able to display it on three monitors.

No dual-head card can support three monitors. Not even two SLI'ed cards. They may have four outputs, but yet they don't support three monitors.
The Parhelia is the only way to get LFS on three monitors.

And the Parhelia isn't exactly tuned for 3D gaming performance :(

You're right it's not. But nVidia are releasing a lot of quad headed cards now. Agreed they are all the 7800's and cost a bomb, but it looks like they listened when people asked :P

I belive there are some other models, but that is the first I found without looking hard.

This is the normal 7800GT chip in SLI-configuration. That chip can't address more than two monitors, not even in SLI-config. That means that thing may have 4 outputs, but only two of them can be active at a time.
That's my small knowledge, correct me if I'm wrong.
